As a Food Service Supervisor with Dane County Consolidated Food Service I am performing the task of Production Manager, Catering Manager, and Small Ware Stock Manager. My Production Manager duties include the direction of operations with regard to the production of food service items intended for service at the Dane County Jail, Public Safety Bldg., Juvenile Detention, Verona Senior Center, Verona Meals on Wheels, Dane County Youth Neighborhood Intervention Program, and Badger Prairie Health Care Center. Scheduling, payroll, and evaluation of CFS personnel is also involved in my daily duties.
Working as the center stone of operations within the facility I am responsible for the coordination of various branch departments directly and indirectly related to the food service operations, resulting in the completion of the daily production with regard to the preparation of Dane County client meal programs.
I also act as computer trouble shooter for the department, offsetting in many instances the need to take systems management away from their tight schedule. I also act as direct clerical assistant to the Food Service Manager with respect to clerical support in relation to budgetary matters and other supportive functions.
As part of the Consolidated Food Service Management Team, I routinely deal with issues relating to employee union matters, patient special diet concerns, facility equipment regulation, and facility catering functions.
One of my major accomplishments while at CFS include the complete redesign and computer automation of the facilities production system. The success of my changes results in more efficient and productive flow of operations as is focused on food service production, planning, and management.

During my service as a Chef for Belmont Nursing and Rehabilitation Center of Madison, I was responsible for the preparation and servicing of meals for geriatric residents of the facility. Supervision of dietary personnel assigned to my shift was also accomplished.

During my service as a Special Diet Chef with Glenbeigh Health Sources of Tampa, I was responsible for the production, control, and servicing of special diets that were intended for patients with severe eating disorders associated with food addiction. The production of these meals required extreme portion, ingredient, and servicing controls. All of which I was solely responsible for. In addition to providing meals to patients with food addiction I was also responsible for the preparation of dietary items intended for patients with chemical abuse disorders.

During my service as an Assistant Manger with ARC Food Inc. of Tampa (Little Ceasars Pizza Div.) I was introduced to the fast food segment of the food service industry. I became familiar with and accustomed to principals of food service management with regard to short order requirements. Short order production, management, inventory, and marketing were all covered while serving with ARC Foods Inc.

During my service as a Food Service Specialist with the U.S. Army Europe I acquired and mastered specialized skills in the areas of food service management, production, and servicing. Included in the wide variety of tasks undertook by myself were the production of food service items ranging from beverages, salads, salad dressings, soups, sauces, vegetables, meats, seafood, poultry, appetizers, relish trays, quick breads, yeast dough products, specialty sandwiches, rice, and pasta products. Included among my tasks were the operation and maintenance of major kitchen equipment, food service safety and sanitation, receipt, inspection and storage of food service items. Training and supervision of incoming and novice personnel was also accomplished. During my time as a Food Service Specialist I received numerous commendations and awards for my work in the food service field of the U.S. Army.

During my service as a Storekeeper with the U.S. Coast Guard I acquired a vast array of skills in the areas of clerical administration and supply oriented functions. Among the tasks performed were administration, supply, shipping, receiving, material returns, project management, inventory, accountability, and payroll. I have acquired knowledge and skill with regard to the use of most office equipment, filing systems, telephone systems, computer equipment, and word processing materials. My training and work in this field has made me proficient with the use of word processing systems, computers, and related PC equipment and software/hardware. My keyboard and typewritten ability is currently 55 WPM. Training and supervision of subordinate personnel was also a routine task. During my time as a Storekeeper I attended and completed numerous service schools relating to the positions with which I held.
